Cusco is not in a valley: it is on the top step of a staircase almost four kilometres tall
The city sleeps at 3,399 metres. The valley below it starts at 3,000 and drops to 2,050 over a hundred kilometres. And the peaks closing it to the north reach 5,893. Understanding that drop explains what grows on each stretch, where it gets cold and why the valley is warmer than the city.

There is a phrase repeated in every guidebook that produces an enormous misunderstanding: the Sacred Valley, that place you go down to from Cusco. The key words are go down, and almost nobody registers them.
The city is at 3,399 metres. The valley starts at 3,000 at its upper end and finishes at 2,050 at the other. That is: the valley is not up in the mountains. It is below the city, and at its far end it is thirteen hundred metres lower.
01 The misunderstanding in the word valley
The mistake comes from associating mountains with cold and valleys with a mild, flat-bottomed plain. Here both halves of that equation fail. This valley is wedged between very high slopes and its cultivable floor averages barely a kilometre across.

And above that strip things go vertical. North of the valley rise two mountains that dominate it completely: Sahuasiray, at 5,818 metres, and Veronica, at 5,893. Between the river's lowest point and those summits there is almost four kilometres of vertical range.
02 The four steps
The useful way to look at this region is not as a flat map but as a staircase. Each altitude band has its own climate, its own crop and its own way of life, and they are all a few hours from one another.
At the very top, above 4,000 metres, is the puna: tough grass, few plants and camelid grazing. One step down, between 3,200 and 3,900, is the floor of the city and of the tubers, with the potato as the dominant crop.
Then comes the valley proper, between 3,000 and 2,500, where the climate turns kind. And below that, as the river drops towards 2,050 metres and beyond, the cloud forest begins, with humidity, dense vegetation and an entirely different world.
03 Why the maize is down below
One historical fact sums up this whole logic in a line: this valley was the most important maize-producing area in the heartland of the Inca empire. Not the potato, which grows well up high: maize, which needs more warmth.
The maize is down below because it is warmer down below, and it is warmer because it is a thousand metres lower than the city. It is exactly the same reason why someone arriving from sea level is better off spending their first night in the valley than in Cusco.
The Chanapata civilisation was already using this area around 800 BCE, precisely because of the richness of its soil, and it was followed here by the Qotacalla culture, between 500 and 900, and the Killke, until their absorption into the Inca empire in 1420.
04 Terraces, or how to manufacture a step
With a valley floor a kilometre wide and slopes rising four thousand metres, the agricultural problem is obvious: there is no flat surface. The solution you see everywhere is the andenes, farming terraces that expand the usable ground.
A terrace is not just a shelf. Building a wall and filling behind it creates a horizontal surface that holds water instead of letting it run downhill, and that also stores heat during the day. It is a way of moving a crop one step up the staircase.

The most striking case is a set of circular, concentric terraces cut into a depression in the ground, where each ring sits at a different height and with a different exposure to the sun. It has been proposed that they worked as an experimental agricultural station, though their exact use is still debated.
05 The floor where nothing grows any more
The highest step has rules of its own. Above 3,800 metres, winter nights drop to around five degrees below zero, and there farming stops: what remains is tough grazing grass and plants adapted to extreme cold.

But that cold is not only a limit: it is also a tool. The night frosts at that altitude are the condition that allows food to be preserved in the open air, and on them was built a technique that has been working in these Andes for thousands of years.
06 How to use the staircase
The first practical consequence is about order. If you are arriving from the coast, the city is not the gentlest step: the valley is between three hundred and thirteen hundred metres lower and is a considerably kinder place for the first nights.
The second is about packing, and it is the one most people underestimate. In a single day you can be at 2,500 metres in the sun and at 4,000 in the wind, so clothing is chosen not by the season but by which step you will be on at each hour.
And the third is about how you look. When you see a slope with terraces, you are not looking at a decorative ruin: you are looking at a deliberate attempt to move a crop from one altitude band to another. In a region where the climate changes every three hundred metres, that was the difference between eating and not eating.
