Anyone entering a cocoa estate in southern Bahia for the first time usually takes a while to realise they are already inside it. There are no rows. There is no clearing. There is none of the regular grid you associate with a tropical crop. There is forest, with trees twenty or thirty metres tall and permanent shade.
The cocoa is down there, in the middle storey, and its fruit grows stuck to the trunk, not on the branches. You can walk past a laden cocoa tree without seeing it because you are expecting a field and what you have in front of you is a forest. This has a name: it is called cabruca.
01 A plantation that does not look like one
The reason cocoa is grown this way is neither aesthetic nor ideological: it is physiological. The cocoa tree is a tropical understorey species. It grows well in the shade of other trees, and continuous direct sun does not suit it.
In southern Bahia that coincided with a forest that was already there and that offered exactly that shade. The state's coastal strip belongs to the Atlantic forest domain, with rain spread across the whole year and high, steady temperatures.

So instead of felling the forest and planting a crop that needs shade, the opposite was done: use the shade that was already there. It is a practical decision before it is a conservationist one, and that is why it has lasted.
02 What a cabruca actually is
The procedure consists of cleaning the inside of the forest: the understorey and the small trees are removed, the big ones are left standing, and the cocoa trees are planted beneath them. What remains is a two- or three-storey structure in which the crop occupies the middle one.
The word comes from the verb that describes that job. Going into the vegetation to open a space and plant was called brocar a mata, and from there came cabrucar and, finally, cabruca. The system's name is literally the name of the work.
The system's expansion in southern Bahia begins in the early eighteenth century, and the most recent plantings date from the 1980s, in the final phase of the cocoa expansion. Which is to say, we are talking about a technique in continuous use for more than two hundred years.
03 Twenty species per hectare, by decree
There is one figure that turns this into something verifiable rather than a pretty label. State decree 15,180, of 2014, establishes that to count as cabruca a hectare must contain at least twenty native species. Not twenty trees: twenty different species.
The legal minimum falls short of what is found on the ground: some studies put the average at fifty-four species per hectare. For a farming system, that is an amount of diversity almost no other commercial crop can match.
Hence the role cabruca is credited with. In a biome as fragmented as the Atlantic forest, these estates work as a reservoir of native trees, particularly large specimens and hardwoods, which are exactly the ones under most selective-cutting pressure elsewhere.
04 1989: the fungus
In 1989 witches' broom reached Bahia, caused by the fungus Moniliophthora perniciosa. It is a disease that deforms the cocoa tree's shoots until they look like a dry besom and ruins the plant's yield.
The state was then Brazil's main cocoa region and the country had become the world's second producer in the previous decade. Within three years the disease hit some 300,000 hectares, and national output went from around 450,000 tonnes a year to under 100,000: a fall of more than seventy-five per cent.

The impact was not only agricultural. An entire district that lived off a single product was left without it in little more than five years, and even now the economic recovery of southern Bahia is told with that date as its starting point.
05 What the crisis did to the forest
Here is the part that almost never gets told. The answer to the disease was to introduce resistant, higher-yielding varieties, and that change, necessary as it was, pushed against the shade system: more productive varieties want more light and less canopy.

On top of that comes a slower, less visible process. In the periodic clearing of the understorey the seedlings of native species are pulled up without meaning to, and introduced fruit trees and fast-growing pioneers are favoured instead. The cabruca is still a cabruca, but its composition changes.
That is why the honest conclusion is not that this forest is safe, but something more fragile: it is still standing because there is an economy that needs it standing. The day cocoa stops paying under shade, the shade stops having defenders.
06 What to look at when you are standing in it
First, upwards. If the cocoa is in the middle storey, what is above it defines the estate: how many tall trees are left, whether they are native or introduced fruit trees, whether the canopy is continuous or opened into gaps. You can see that in five minutes and it tells you almost everything.
Second, at the trunk. The pods come straight out of the old wood, out of the trunk and the thick branches, not out of the young twigs. It is a striking feature and a fairly rare one among the crops people eat every day.
And third, on the label. It is worth telling apart two words that often get confused: cabruca describes the structure of the crop, cocoa under native trees; organic describes whether synthetic products are used. An estate can meet one and not the other. Knowing which of the two you are paying for is exactly the kind of context that changes how a chocolate tastes.
