There is one fact about tequila that is almost never told and that completely changes how you look at an agave field. The plant it is made from is a plant that is deliberately not allowed to finish its cycle.
It is not a textbook curiosity. From it come the crop's genetics, its fragility and an ecological problem the industry itself has had to start solving.
01 A plant that saves up for years

Blue agave is a monocarpic plant, which is the technical way of saying it reproduces once in its life and then dies. For that single attempt it needs an enormous amount of energy, and it accumulates it slowly.
For years, the plant converts what it photosynthesises into sugars and stores them in the heart, the short thick stem beneath the rosette of leaves. The process takes between seven and twelve years.
When the store is full, the plant spends it all at once: it raises a flower stalk several metres tall, flowers at the top, produces seed and is spent. That stalk is the reason the crop works the way it does, but the opposite way round from what you would imagine.
02 The cut comes just before
To make tequila you need exactly what the plant has stored: sugar. The heart is cooked, milled, fermented and distilled, and the yield depends on how much sugar it contains.
And there is the conflict. If the plant flowers, that sugar goes into the stalk and the flower, and the heart is left empty. A plant that has flowered is useless.
So the harvest happens just before: when the store is full and the stalk has not yet emerged. In practice, when the stalk starts to show it is cut off, and the plant is gathered shortly after. No plant destined for the distillery ever gets to flower.
If the plant flowers, the sugar goes into the flower: the harvest consists of arriving just before.
03 And that is why the whole field is a clone

With no flower there is no seed, and with no seed the plant has to be multiplied another way. The agave allows it: it produces offshoots, sprouts that come up at the foot of the mother plant and are pulled off and replanted.
The result is that every new plant is genetically identical to the last. An agave field is not a population: it is one individual repeated hundreds of thousands of times, and the whole commercial crop descends from a very small number of original plants.
That has one obvious advantage, uniformity, and one risk anyone who has seen a monoculture will recognise: if a pest or a fungus appears that affects that genetic make-up, it affects every plant equally, because they are the same plant.
To that risk is added time. With a cycle of seven to twelve years, an affected plantation is not replaced in a season: it is replaced in a decade.
04 The animal left without flowers
The other consequence is in the air. Agave flowers are visited at night by bats that feed on nectar and pollen, and in moving from one plant to another they pollinate them.
Six nectar-feeding species have been documented on the agaves of this region, among them the lesser long-nosed bat. Several of them make long migratory routes, moving along the flowering of agaves the way you would follow a line of service stations.
The problem is arithmetic. If the commercial crop occupies enormous areas and none of those plants flowers, that line of service stations vanishes exactly where it used to be densest.
And it is a circle: with no bats there is no cross-pollination, with no cross-pollination there is no genetic variability, and with no genetic variability the plant that sustains the industry is more exposed to any pest.
05 What is being attempted

Since 2016 there has been an initiative that tackles the problem from the simplest angle: persuading producers to let a small percentage of their plants flower. Not all of them, nor many: a percentage.
The counterpart is a label certifying that practice which can go on the bottle. The project works with tequila and mezcal brands in Jalisco, Michoacán and Oaxaca, across four different agave species.
The economic logic is what makes it work. Letting some plants flower costs money, because they are plants that will not be harvested after a decade of care. But in exchange it maintains pollination, genetic variability and, with it, the long-term health of the crop itself.
06 How to see it when you are there
The first thing you can do is count stalks. Walk a commercial agave field and look for a raised flower stalk: you will not find one, and that absence is exactly the point.
Then look at the edges. Agaves growing outside the plantation, on boundaries, banks and uncultivated ground, do get to flower, and their several-metre stalk with the flower on top is visible from a distance. The contrast between the field and the boundary tells the whole story.
And if you visit a distillery, the useful question is not how many years the tequila spent in barrel, but how old the plant was and whether any are allowed to flower on that estate. The answer says far more about the product than the label does.
