01 It Is Not Just a Coffee
The visitor's mistake is ordering coffee as in any chain and leaving in ten minutes. The Kaffeehaus plays a different game: order a Wiener Melange —espresso, milk and foam— or a kleiner Brauner, and let the place do the rest. The drink is the ticket; what you buy is time.
02 The Right to Stay
The unwritten rule of the Kaffeehaus is that no one throws you out. Historically, the coffee house was the 'living room' of those who had none: writers, musicians and neighbours used it as office, club and reading room. That is why the glass of water keeps being refilled and the newspapers hang on racks for you. Staying an hour over a single cup is not rude: it is exactly what the place exists for.

03 An Institution with Rules
Being welcoming does not mean being informal. In 2011 UNESCO inscribed Viennese coffee house culture as intangible cultural heritage, describing exactly that: a space where 'time and space are consumed, but only the coffee appears on the bill'. There is a repertoire —Melange, Brauner, Einspänner, Kapuziner— and a recognisable setting: marble, bentwood, mirrors and vaults. Café Central, Sperl and Landtmann have kept that code since the nineteenth century.
